Ingredients
2 cups flour
1/2 cup sucanat
1 1/2 t baking powder
1/2 t baking soda
1/2 t salt
1 egg beaten
1 cup cranberries
2 T canola oil
Juice and rind of 1 orange
Directions
Preheat oven to 350 degrees
Sift together dry ingredients
Combine orange juice, rind and enough boiling water to make 3/4 cup liquid
Add oil and egg, mix
Slowly fold liquid ingredients into dry ingredients
Fold cranberries into batter
Scrape into an oiled bread pan bake for 50-60 minutes
