Ingredients
Serves 4
Marinade
4 T white miso
2 T Mirin
1 1/2 T water
1 T agave nectar
1/2 T fresh ginger grated
1 T canola oil
1/2 t sesame oil
1 medium eggplant sliced
Directions
Layer sliced eggplant in a shallow dish.
In a blender mix miso, mirin, water, agave, ginger, canola oil and sesame oil until smooth
Pour over eggplant, toss gently. Make sure eggplant is well coated on all sides.
Let marinade for 20 minutes.
Pre-heat grill.
Remove eggplant from dish and place onto hot grill.
Cook each side 3-5 minutes or until done.
